Victoria, BC| Full-Time & Part-Time | Seasonal & Year-Round At The Flying Otter Grill, we create memorable dining experiences from the ground up. Every dish starts from scratch, every service is a team effort, and on our busiest days, we serve over 1,500 guests. From seafood paella loaded with six proteins and house-made pasta tossed to order, to salmon wellington wrapped in puff pastry and perfectly finished rib eyes, you'll be cooking food you're proud to serve. Every sauce, stock, and protein is prepared in-house. If you thrive in a fast-paced kitchen, love the energy of high-volume service, and want to sharpen your craft alongside a great team, you'll feel right at home. What you'll do * Cook a scratch-made menu: seafood paella, house pasta, beurre blancs, demi-glaces, steak, seafood, and everything in between. * Hold your line during high-volume rushes (1,500+ covers on our busiest nights) without dropping quality. * Keep your station clean, stocked, and food-safe on every shift. * Work as a team; this kitchen runs on people covering for each other. What you bring * Kitchen or food service experience ideally in a scratch kitchen, not a quick-serve line. * Solid knife skills and cooking fundamentals; comfort with sauces, proteins, and technique. * FOODSAFE Level 1 (or willingness to get certified before you start). * Availability for evenings, weekends, and peak season (August–September). * The stamina and composure to thrive on a busy, high-volume line.
